SACRAMENTO – Today Assemblyman Josh Hoover (R-Folsom) proudly announced that Julian’s Patisserie and Café has been named the March 2025 Small Business of the Month for the 7th Assembly District.
Founded in 2017 by Chef Julian Jimenez and his wife, Bailey, this exceptional local bakery has become a cherished part of our region, delighting customers with artisan croissants, fresh-baked pastries, and handcrafted desserts.
Julian’s passion for baking began in his grandmother’s kitchen, where he first discovered the joy of creating delicious pastries. His journey took him from the family kitchen to the world of fine dining, honing his craft aboard Norwegian Cruise Lines in Hawaii and later serving as Executive Pastry Chef at prestigious Las Vegas resorts, including Bellagio, Cosmopolitan, and Caesars Palace. Despite his success on the national stage, Julian’s heart remained in his hometown of Folsom, where he returned to open Julian’s Patisserie and Café in 2017.
In addition to running a thriving business, Julian is making waves on the national stage, competing in this season of Food Network’s Spring Baking Championship. No stranger to high-stakes competitions, Julian has previously showcased his talents on Holiday Wars, Cake Wars Christmas, and Halloween Wars. His exceptional skills in sugar artistry, chocolate work, and laminated dough creations have earned him a place among the country’s top pastry chefs. With 13 talented bakers vying for the title, Julian is set to represent Folsom with creativity, precision, and passion.
“Julian and Bailey Jimenez have created more than just a bakery—they’ve built a community hub where people can come together over exceptional, handcrafted pastries.” Assemblyman Hoover remarked. “We are proud to recognize their hard work, talent, and passion, and we look forward to seeing their continued success both locally and on the national stage.”
Josh Hoover represents Assembly District 7, which includes the cities of Citrus Heights, Folsom, and Rancho Cordova and the unincorporated communities of Carmichael, Fair Oaks, Foothill Farms, Gold River, Mather, McClellan Park, North Highlands, Orangevale, and Rosemont.
